Mezcal Master

As a Mezcal Master, Filogonio Cruz has dedicated his career to perfecting the art of Mezcal production. He is highly skilled in all aspects of Mezcal making, from selecting the right type of agave to overseeing the distillation process. Trece Monos Mezcal undergoes two distillations in copper stills to achieve its high quality.

Origin

San Baltazar Guelavilla is a small town located in the Oaxaca region of Mexico. This area is known for its rich Mezcal culture and history, with many families and communities producing their own Mezcal using traditional methods.

Maguey

100% Espadín agave. Espadín agave is the most common type of agave used in Mezcal production. It is known for its robust and earthy flavor, and it is often used as a base for other Mezcal varieties. Trece Monos Mezcal is made using 100% Espadín agave, giving it a rich and complex flavor.

Maturation

After the Mezcal has been distilled, it is aged in oak barrels for seven years. This allows the flavors to develop and become more complex over time.

Oven Type

In order to extract the sugars from the agave, the agave hearts (or piñas) must be roasted. This is done in a conical earthen oven, which is heated using wood or charcoal. The agave is roasted for several days, which helps to develop its unique flavors.

Milling Type

After the agave has been roasted, it must be milled to extract the juice. This is done using a stone mill, which grinds the agave into a fibrous pulp. The resulting juice is then fermented to create the base for Trece Monos Mezcal.
